IRISH SODA BREAD
from the Mercantile

4 cups flour
1 Tbs. baking powder
1 tsp. baking soda
1/4 cup sugar
1 tsp. coriander
1/4 cup butter
1 egg, beaten
1-3/4 cups buttermilk or sour milk

Mix: flour, baking powder, baking soda, sugar & coriander. Cut in butter with a pastry cutter or by hand until crumbly. Mix egg with buttermilk. Add milk to dry ingredients & mix until blended. Turn onto floured board & divide into 2 loaves or leave as 1. Knead slightly & form into round loaves. Place in greased pie pan or cookie sheet. Cut a cross into top of the loaf or loaves. Bake at 375 degrees for 35-40 minutes, until done.
