DADDY’S DELICIOUS BLUEBERRY PANCAKES
from the Stephen Taber

1 3⁄4 cups flour
1 tsp. salt
2 tablespoons sugar
1 3⁄4 tsp. baking powder
3 tablespoons honey
2 eggs, lightly beaten
1⁄4 cup vegetable oil
1 cup milk
1 quart blueberries (the small Maine variety are best)

Combine the dry ingredients. Combine the wet ingredients. Mix them together quickly. Do not over mix. Add blueberries just before cooking. Heat griddle on stove until very hot. Water should dance when dribbled on the griddle. Griddle should be greased ever so lightly. Using a ladle, drop batter onto the griddle. Turn when the sides of the pancakes are bubbling a little. Serve with softened butter and pure Maine maple syrup that has been warmed on the stove.
