CROTCH ISLAND QUARRY CHOCOLATE CAKE
From the Mary Day

Ingredients for Filling:
8 oz of cream cheese
1 egg
1/4 cup of sugar
1 teaspoon of vanilla
1 cup of chocolate chips

Directions for filling:
Cream cream cheese and beat in eggs, sugar and vanilla. Beat until fluffy. Fold in chocolate chips.

Ingredients for Cake:
2 eggs
2 cups of sugar
1 cup of vegetable oil
1 cup of hot coffee (also may be raspberry flavored)
1 cup of yogurt, sour cream or sour milk
3 cups of flour
1 teaspoon of salt
2 teaspoons of baking soda
3/4 cup of baking cocoa
1 teaspoon of vanilla

Directions for cake:
Sift dry ingredients together (sugar, flour, salt, baking soda, baking cocoa) Add the rest of the ingredients together into mixing bowl. Beat together, and pour batter into wellgreased bundt pan. Drop filling on top of batter with spoonful midway between center and outside of pan (filling will sink into cake while baking). Bake at 350f for 45-60 minutes. Cool for 10 minutes in pan, then flip out.
