MAPLE WALNUT PIE
from Pam Smith-Sheridan of the Victory Chimes

3 eggs
1/8 t. salt
1/4 c. granulated sugar
4 T. melted butter
1 c. pure MAINE maple syrup
dash of maple extract
1 c. chopped walnuts

Make a pie crust to fit a nine-inch pan. Roll out the pastry and line the pie pan. Prick the shell with a fork and bake in a 425 degree oven for about ten to fifteen minutes or until the crust is golden.

Whisk together the eggs, salt and sugar. Add the melted butter, syrup, and extract. Spread the chopped walnuts over the baked crust. Pour the filling over the nuts and bake in a 425 degree oven until just set. That should be about thirty to thirty-five minutes. You can serve this with either whipped cream or cream cheese frosting.
