CARIBBEAN BANANA MUFFINS

3/4 Cup oil
2 Cups sugar
2 eggs (beaten)
4-5 mashed bananas
about 1/8 Cup rum (use orange juice instead if you don't like rum)
3 Cups flour
2 tsp salt
2 tsp baking soda
1 tsp nutmeg
1 tsp ginger

Combine wet ingredients in a smaller bowl, dry ingredients in a larger bowl. Mix together until just combined, do not over mix! Spoon into greased muffin tins. Bake at 400° for 20-30 minutes. (Rum will make the muffins a little sticky. )

Makes about 2 dozen
