SPINACH SALAD

10 oz. spinach
5 strips bacon, cooked and crumbled
1 bunch scallions, sliced
1/4 lb. raw mushrooms, sliced

Dressing, mix well:
2 Tbs. lemon juice
6 Tbs. olive oil
3/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. dry mustard
1/4 tsp. sugar
1 egg yolk

Marinate the mushrooms in the dressing for an hour. Just before serving, toss spinach, bacon and scallions together with dressing and mushrooms.
